I'm not getting the crema I used to.
On the Francis x-3 - At first I was getting a very good shot with lots of crema. No more. What's the best way to figure out what I'm doing wrong? I'm using ground coffee and the two shot filter holder.
There could be a couple of things that are affecting your crema. If you're using the same coffee as before, it may be that it's a bit older, which can affect the way it brews. In addition, if you've changed coffees you may notice a difference - every coffee will produce different crema. Either way, there are a couple of things you can do to maximize the amount of crema you get. The first is to run a blank shot through the machine prior to brewing. This simply involves attaching the empty portafilter to the machine and pressing the brew button for a few seconds to let hot water run all the way through the brew group and portafilter to ensure they're up to proper brewing temperature. I would also make sure to preheat your cups before brewing by rinsing them out with hot water. Cold cups or brewing components will absorb the heat from your coffee, not only lowering its temperature, but also affecting the crema that appears.
